Recipe: Versatile Roasted Winter Vegetable Dish

Roasted Winter Veggies:
Use all or as many organic ingredients as possible
Preheat oven to 350 degrees
Grease a large cookie sheet- I put all the chopped veggies on one layer.
Cut all the root veggies about the same size for uniform cooking.
Pick what you like from this list or whatever is fresh and available:
Sweet and or red, white potatoes – peel off any hard or bumpy parts
Baby Brussels sprouts ( or regular sized cut up smallish )
Sweet yellow onion
Mushrooms ( good for immune system )
Cauliflower ( small pieces )
Walnuts, if you like crunchy like I do. ( brain food )
Dried cranberries , handful ( flavorful, sweet and has antioxidants )
Coconut butter, if hard – break up about a good teaspoon.
Olive oil – we all know this is great for us.
Maple syrup – sprinkle over everything before baking – Yum

Bake for about 35 minutes. Everything should be just fork tender.
